Uttapam can be made from rice or semolina (rava / sooji) which is used as a base for uttapam pizza. The instant rava uttapam pizza consists of a base uttapam made from rava, with veggies and lots of cheese toppings. For Uttapam Base

Semolina / Suji / Rava1 CupCurd1 Cup
Water1/2 CupSalt1/2 Teaspoon or As Per Taste
Curry Leaves, Chopped10 - 12Green Chillies, Chopped1 - 2
Ginger, Thin Sliced1 InchMustard Seeds (Rai)1 Teaspoon
Fennel Seeds1/2 TeaspoonGhee or Oil2 Teaspoon

For Pizza Toppings

Ghee or Oil1 TeaspoonOnion, chopped1 Medium
Broccoli, Small Florets1/4 CupRed Bell Pepper, Chopped1/2 Cup
Tomato Ketchup Or Schezwan Chutney2 - 3 TablespoonMozzarella Cheese, GratedAs Desired
SaltA Pinch or As Per Taste  

  • Take semolina (suji or rava) in a bowl. Add curd and water to it and mix well. Keep it for 1 hour to soak it well.
  • After 1 hour, heat 2 tablespoon ghee or oil in a pan on medium heat. When it becomes medium hot, add chopped curry leaves, chopped green chillies, chopped ginger, mustard and fennel seeds and fry for 1 - 2 minutes while stirring continuously. Tempering is ready.
  • Add this tempering to the well-soaked rava and mix well.
  • Chop all the vegetables. Heat 1 tablespoon of ghee or oil in a pan over medium heat. When ghee gets hot, add chopped vegetables like broccoli, red bell peppers, onions and a pinch of salt and fry it for 2 - 3 minute, while stirring continuously.
  • Transfer them to a plate and set aside.
  • To make uttapam pizza base, preheat a non stick thick and flat bottom pan. Add a ladleful of rava batter to the pan and evently spread. The base of uttapam should not be too thin and not too thick.
  • Allow the base to cook on medium heat from one side, when it is cooked from one side, flip to cook it from the other side also.
  • Spread tomato ketchup or shezwan chutney over it. Spread all the fried vegetables over it and pour mozzarella cheese on top. Cover it with a lid (preferably the glass lid so that we keep an eye on it) and allow to cook it over medium heat, until the cheese to melt and mix with the vegetables.
  • Turn off the gas and transfer the uttapam pizza to a plate. Delicious uttapam pizza is ready, serve it hot.
