Pav Bhaji is a popular street food from Mumbai, India. It consists of a spicy mix vegetable curry known as "bhaji", which is served with soft buns called "pav". It is a delicious and satisfying dish that is loved by people of all ages.
To make bhaji, vegetables like potatoes, peas, cauliflower, carrots and capsicum are boiled and then mashed together. In a pan, spices like onion, garlic, cumin, turmeric, red chilli powder and pav bhaji masala are fried in mixture of butter and ghee. Mashed vegetables are added to the pan along with tomato puree and cooked till well combined and flavourful.
Garnish it with fresh chopped coriander leaves, lemon juice and some butter. Pav buns are sliced and toasted with butter on a tawa until they are golden and crisp on the outside, yet soft and fluffy on the inside.
