Khasta Kachori is a popular Indian snack known for its crispy texture. It is a deep fried snack filled with a spicy and flavourful mix lentils, spices and sometimes other ingredients such as onion.
To make crispy kachori, a dough is prepared by adding ghee or oil and a pinch of salt to the flour. Meanwhile, the stuffing is made by cooking the soaked lentils mixed with spices. The stuffing is then allow to cool.
The dough is divided into small balls, rolled into discs and filled with a spoonful of stuffing. Then seal the edges, and make a flat patty out of the filled dough. These kachoris are deep fried till golden brown and crisp.
Crispy kachoris are often served with spicy tamarind or pudina chutney. It is taken as a snack with tea or coffee. The combination of the crispy outer crust and the savory and spicy filling creates a delightful snacks.
