To make it tasty, first we have to deep fry the whole baby potato in oil, but do not fry the potato too much. As we have to cook with curd gravy also. You can use any edible oil for frying potatoes but mustard oil gives real flavor to Kashmiri Dum Aloo. The curd used for making the gravy should not be sour as sour curd will spoil the taste of dum aloo and you will not enjoy the dish. Spices like sonth powder, green cardamom powder, fennel powder, kashmiri chili powder etc. add flavor and aroma to the dish.
